Ingredients:

  • 1 cup lentils (soaked)
  • ½ cup chickpeas (soaked and peeled)
  • 1 onion (chopped)
  • 3 tomatoes (blended)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp tomato paste
  • ½ cup vermicelli noodles
  • ½ cup fresh parsley and cilantro (chopped)
  • 5 cups water or broth

Instructions:

  1. Heat olive oil in a large pot and sauté onions and garlic.
  2. Add blended tomatoes, tomato paste, and spices, then cook for 5 minutes.
  3. Stir in chickpeas, lentils, and water/broth. Cover and let simmer for 30 minutes.
  4. Add vermicelli noodles and cook for another 10 minutes.
  5. Garnish with fresh parsley and cilantro. Serve with dates and Moroccan bread.
