Ingredients:
- 1 cup lentils (soaked)
- ½ cup chickpeas (soaked and peeled)
- 1 onion (chopped)
- 3 tomatoes (blended)
- 3 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp turmeric
- ½ tsp cinnamon
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp tomato paste
- ½ cup vermicelli noodles
- ½ cup fresh parsley and cilantro (chopped)
- 5 cups water or broth
Instructions:
- Heat olive oil in a large pot and sauté onions and garlic.
- Add blended tomatoes, tomato paste, and spices, then cook for 5 minutes.
- Stir in chickpeas, lentils, and water/broth. Cover and let simmer for 30 minutes.
- Add vermicelli noodles and cook for another 10 minutes.
- Garnish with fresh parsley and cilantro. Serve with dates and Moroccan bread.
